Back in 2015 when we first tasted the microlot from the Wanale region, it was… well, let’s just say it didn’t tingle the taste buds. Fast forward to this year's harvest and the journey of quality enhancement is a testament to the dedication and expertise of the local farmers and the tireless efforts of Zukuka Bora (ZB) to improve and refine their processing. From the first harvest, where the coffee fell below specialty quality, to the current harvest, the transformation has been remarkable. Through continuous learning, innovation, and a deep understanding of the land, they have honed their skills in cultivating and processing the cherries with meticulous care. By implementing improved farming practices, stringent cherry selection, and refined processing, they have been able to unlock the full potential of this regional collaboration. After harvesting, the cherries are pulped to remove the outer fruit, revealing the beans inside. These beans are fermented in water tanks overnight to remove any remaining pulp, and slowly dried in parabolic dryers on raised beds. Wanale is a clean and sweet representation of a washed processed coffee exhibiting notes of hibiscus and fresh tropical punch with a milk chocolate sweetness. This is a true gem from the ZB team, and is testament to the tireless hard work and passion of the Mt Elgon coffee community.
