Little did we know Diego would go on to win worlds in MIlan later that year, couldn’t have gone to a more deserving winner. Concentrating more so in the farming of coffee, now producing flavour bombs like this from Huila. Sammy and Jordy got to sample this number in early 2022 and were stoked to taste it was still a winner, and the pre-shipment Sam snuck in through customs for the roastery team was phenomenal. With this being their third season Diego and Derlin have improved, refined and dare I say; perfected their processes. Year on year their hard work and dedication pays off and we’re always surprised how great coffees become great-er-er. This year's lot has been built of select ripe cherries from their Colombia varietal trees. Diego’s Washed coffees follow a 24:36:12 pattern. 24 hours full cherry ferment, 36 hour second ferment after pulping and 12 hour soak, before being shade dried in parabolic dryers on raised beds.
