This is now our third year importing this fan favourite! (Seriously the French Brewer’s Cup champ couldn’t get enough at MICE). Named for their daughter Sofi who isn’t very pequeña anymore at 3 years old, she was the inspiration for Diamante Coffee Farm, where family comes first for the Campos-Roa clan. We’re happy to be a supporting factor in their growth. With this being their third season Diego and Derlin have improved, refined and dare I say; perfected their processes. Year on year their hard work and dedication pays off and we’re always surprised how great coffees become great-er-er. This year's lot has been built of select ripe cherries from their Colombia varietal trees. Diego’s washed coffees follow a 24:36:12 pattern. 24 hours full cherry ferment, 36 hour second ferment after pulping and 12 hour soak, before being shade dried in parabolic dryers on raised beds. When we visited last year, the smell alone of this process was enough to get the juices flowing. So sit down and have a sip on this little one, with punchy lemon squash, peach tea acidity and apricot jam notes leaving a super clean finish.
