Don Elias is an incredible coffee producer of over twenty years. He and his wife, Bellany, have built the family owned Finca Tamana in El Pital, Huila, and are now supporting their daughter Derlin and her husband Diego establish their own coffee farm nearby in La Plata. We’re lucky to have crossed paths with Diego in Melbourne a few years back. A few years later we’re one of his very first coffee roaster partners - huzzah! This family blend is a combination of lots from both Finca Tamana and Diamante Coffee Farm. Each lot is built with select ripe Caturra cherries that were fermented for 24 hours before pulping and a secondary 24 hour parchment fermentation. After 15 days of drying and a boat ride to Commonfolk, we’re picking up juicy red apple and plum acidity, and underlying toffee sweetness.
