The Kirura Factory is a local co-op of around 800 members who collectively have about 400 hectares of coffee trees. They combine forces and share resources to produce the best quality coffee, but also tap into the requirements of international markets. The Kirura group is regularly a finalist in the top 10 Taste of Harvest competitions. Only the ripe cherry is picked in the morning, it is then transported to the wet mill for extra picking to remove anything that isn't ripe and ready for processing. The coffee is then pulped and fermented in tanks of fresh water from the Gatamaiyu river. Once the coffee is free from its sticky mucilage it is floated down channels, removing speedy beans and anything that floats, just leaving the good stuff. The coffee is then dried on raised beds until it reaches its goal moisture percentage. The coffee is kept out of harsh sun and sheltered from rain. the slower the coffee can dry the more stable it will be in transit and when it lands.
