They can be found in an area formerly occupied by the Colonial British of the time, eventually taken back by the indigenous Kikuyu resistance. The cooperative is 500 members strong, who combine their resources and share the burden of running the mill. The producers carefully monitor the slowly ripening cherries and pick them early in the morning before delivering them to the wet mill. They're then picked clean of anything other than perfectly ripe cherries, before being pulped and floated down into the fermentation tanks, all the while skimming off unwanted floaters. Once the coffee is no longer sticky with mucilage it's floated again down the channel with fresh water, removing anything unwanted as it flows. The remaining coffee is of the highest quality and will dry in the sun on raised beds until reaching its perfect moisture level. Kenyan processing is regarded very highly all around the world and often a benchmark of how to produce washed coffee. Expect delicious notes of Davidson plum, cranberry & a brown sugar sweetness.
