His family has always been in coffee and it was natural for him to follow this path. Like many coffee producers the commercial realities hit hard. A commercial coffee farm is incredibly susceptible to the fluctuations of the market. The US dollar dictates everything and even in a good year with lots of people wanting coffee, the price can be driven down as it follows the market. In the commercial coffee game, coffee is just a commodity to be bought and sold by suits on Wall Street. This led Fermin, like many others to pursue specialty coffee. This is the first harvest producing specialty lots and it's like he has been doing it forever. This year all they changed was selective harvesting, so just imagine when they dive even deeper into the myriad of ways to improve coffee quality. Fermin is still extremely new to the specialty coffee market and is yet to see the financial reward he hopes for his family, but is confident they are on the correct path. Japanese Slipper is a sweet honey processed coffee with a distinct ferment flavour similar to melon liqueur so we decided the Melbourne invented cocktail, Japanese Slipper, was the perfect cocktail to name this coffee after. This coffee was sourced and imported by the legends at Caravela.
