Perfectly ripe Sidra cherries are carefully hand picked throughout the four month harvest, depulped on the same day, and fermented for at least 15 hours. Drying is a combination of raised beds and under canopy and takes around ten days give or take depending on weather conditions. Crisp mouth watering green apple acidity leads into complex flavours of passionfruit and cherry, with an intense honey sweetness.
