We know very little about this coffee* other than it originates from the mountains of El Impossible, in the Ahuachapan region of El Salvador. These treacherous peaks have claimed many lives, but against the odds 7 small-scale producers have decided to set up shop 1600masl and risk it all for in pursuit of an impossibly delicious coffee. El Impossible is fully washed and sun-dried on raised beds, before making its way to port on the back of mules, and getting shipped off to the land of Oz.
