His work has helped position El Diviso as a reference point for competition-level Colombian coffee.</p> <p data-end="10457" data-start="10002">Working closely with his brother Adrian and collaborators such as Jhoan Vergara of Las Flores, Nestor has refined processes including thermal shock, anaerobic fermentation, and cultured fermentations.
